Mac Mail "zoom" like Pages zoom?

With the Specific e-mail in view and focus - the two keyboard combo Command + will zoom in the specific e-mail. Command + again and it will enlarge the text again

Mail has no inherent zoom tool, but one can select View menu > Customize Toolbar… and drag/drop the following tool onto the Toolbar. Thus, by double-clicking the Bigger button, it will enlarge the viewed Mail content.

This gives you a clickable alternative to the ⌘-key +, ⌘-key -, and ⌘-key 0 (zero) shortcuts.

Apple's product teams are embargoed from participating in these public communities, though you can send a new feature request via direct feedback to the Mail product team.

The option-command - +/- key combination expands or shrinks system-wide.

I don't understand what you mean by "system-wide".

If I have several messages open in Mail, even in the same "Conversation", Command-plus or Command-minus only change the text size of the one in focus.
