I currently have an iPhoneXS, running 15.7. I just got an iPhone14 (I assume its running iOS 16? I didn't turn it on yet). Do I have to update my XS to iOS16 before trying to move everything over to the new phone?

There is no public release of 15.7.1. If it's a beta, you might have to remove it. If that was a typo, then you can stay at iOS 15.7
