apple watch set up won’t update

i’m trying to connect a new apple watch series three to my phone but it says it needs updating first. i’ve tried updating it about 10 times with different phones as well as buying a different watch but when it’s about to complete the update, it says there’s no internet connection and completely restarts. On a couple of occasions it went through to a preparing screen however it was stuck on that all day and nothing happened.
