You can purchase a subscription to iCloud + (see Upgrade to iCloud+ - Apple Support). If you're saving video you might want to opt for the largest plan.
When Zoom is active you can set its preferences to save recordings to any place you like. On your Mac choose your iCloud Drive folder then anything inside that. Use: Preferences > Recording > Store my recordings at...
Be aware that iCloud is a syncing service, and a copy will be saved both to your iCloud drive on Apple's servers and your Mac.
I can't see on my iPhone copy of Zoom that it can save a video, but I've never used it for that so perhaps I'm not finding the place for that option.
