how do I change a name for devices on my account?

You can change the name from the device itself.

Taking your MacBook Pro as an example, go to:

System Preferences > Sharing

Then you can enter a different name in the box against the label: Computer Name

*This may be slightly different in Ventura, which I don't have.

In iOS you can use: Settings > General > Name

and enter a new name in a similar box.
