how do I transfer data to my new iPhone if I don't backup to iCloud (I do back up on my home computer)

To transfer if you don't use iCloud, use one of the other two methods (Quick Start or the iTunes/Finder method). See: Transfer data from your previous iOS or iPadOS device to your new iPhone or iPad - Apple Support
