Apple Watch Series 3 requires an iPhone 6s or later: Apple Watch Series 3 - Technical Specifications
Additionally, Apple Watch Series 3 isn't compatible with watchOS 9: watchOS 9 - Apple
And iPhone 7 isn't compatible with iOS 16: iOS 16 - Apple
So you don't have to worry about your iPhone 7 updating to a version of iOS that isn't compatible with your Apple Watch Series 3 or vice versa.
