How do I change my trusted number if I change my number that i originally set up iCloud with and don’t have any other trusted devices linked to that iCloud

You need to -> Sign in to your Apple ID account page and edit / update your Apple ID details.

https://appleid.apple.com

and edit / check your trusted phone number.
