How do I install a Meross accessory using HimeKit? The instructions from Meross simply state that user should be on a 2.4Ghz channel, but my router broadcasts both 5Ghz and 2.4. How do I disable 5Ghz so I can install the Meross devices that require 2.4?

Does the accessory in question support Homekit? I do know Meross makes both Homekit and non Homekit smart plugs. If it does support Homekit you should have instructions on how to enter the Homekit key, etc. As already mentioned there should be no need to disable the 5Hhz channel.
You shouldn't need to disable the 5GHz channel. The device will only use the radio band it can connect to. Should you still want to try look up instructions for your router.
