Good question ... did
you receive an error message that would point to the cause of the situation
the update download but could not be verified
the download appear to be stalled (can take quite a while)
and
were you attempting the update on iPhone via wi-fi or via help of a computer
was the wi-fi signal sufficiently strong
We really do not have enough info. about the situation from you to know for sure
Wondering which iOS version you were trying to update your iPhone 8 Plus from
Apple support have an article online that may help troubleshoot .. or find an answer.
