Our home wifi network - (eero) - tried 2.5ghz option as well and no success. The error is - “unable to join network”.

Just to rule out fat fingers, try changing the ssid and the password to something you can't mistype. Then makse sure you can connect to this network from another machine - connect and then make sure that you can actually have a live webpage load in a browser. Now that you've made sure the conenction works, then try this simplified ssid/password combo on your iphone. It should work. If it does, you are free to go back and update the ssid/password. It it doesn't then the wifi radio on your phone is hosed.

Maybe your iphone does not support the security network, ex wpa3, or it does not support 5g or something
Nothing changed on our end. Just changed overnight and asked to connect to wifi. The phones are used by our kids and not connected to a cellular network.
Steps were completed per apple. When i last spoke with apple - they said they no longer will support troubleshooting the iPhone 5. It’s “classic” ….which is disappointing because the devices worked fine until an apple update occurred.
iOS 10.3.4 came out over 3 1/2 years ago, that is the only update for an iPhone 5. Are you saying you've had problems since then?
What steps have you taken to try to resolve this, it would help to know what you have tried.
PS. If you are on iOS 10 as your specs indicate, you don't have an iPhone 5S, you have an IPhone 5.
Steps - reset network settings. That didn’t work. Next was to complete a full reset and updating to current software. Now devices are stuck in the initial boot up welcome screen because they can’t connect to a wifi network.
What kind of WiFi network are you trying to join - is it off of a home router or some kind of enterprise? What message do you get?
