Hello! I'm currently using an Apple Watch 5s and considering getting an Apple Watch Series 7 or Series 8. I wonder if they will be compatible with my phone and if they will work fine.

Your Apple iPhone is only capable of updating to 12.5.7. Apple Watch 7 requires an iPhone 6s or later with the latest iOS version of 15.7.3. The Apple Watch 8 requires an iPhone 8 or later with iOS 16 or later.

So the answer is no. Neither watch will work with your iPhone 5s.
