Not so certain you can. You'd likely have to return the AppleCare purchase, and then purchase it again correctly.

By contrast, in some countries/regions, AppleCare+ for iPhone offers an optional extension - at additional cost - for loss or theft of the iPhone. To further clarify, this optional coverage is not available for iPad.

While AppleCare+ may not provide the required cover for your iPad, your domestic Home Insurance may provide the insurance coverage that you require.
