I wanted to erase all of my personal data from my MacBook Pro, so I used erase and reset feature. When it was completed - the MacBook will not boot? So I’m now trying to reinstall macOS Ventura and the install stalls at 2 hours 14 mins remaining. Then grows to 17 hours, etc.. help!!!

We'll be glad to help you out. From your post, it sounds like you're already in the installation process. If it went up to 17 hours, depending on where you're at in the process; this is most likely due to your network connection. If it is downloading slowly, it could take a while to complete.
With that said, we'd recommend trying another network to see if the issue persists. Information on this and using macOS Recovery can be found in Use macOS Recovery on a Mac with Apple silicon - Apple Support
