I have lost my NOTES ICON, can you help?

The Notes app is not one of the built in apps that can be deleted. You should be able to find it by go to the Finder "Go" menu and go to the Applications folder. You can drag the Notes app from there to the Dock if you want it on the Dock.

Where exactly have you lost this from? If it is not showing up in Applications, then you should to reinstall the macOS to get it back and everything configured correctly.
