How do I fully backup an iPhone running iOS 16.5.1 to a mid-2012 MacBook Pro running Catalina?

Recent iOS update is no longer compatible - I cannot update my Mac to Big Sur as it is not supported. Does anyone know another way to back up my iPhone fully so that it is restorable? Thinking about getting iMazing or something similar. Thanks in advance.

iPhone SE, iOS 14
