I can't seem to find the 3 TB of storage I should have on my iMac 17.1. All I can see is 121GB on a Flash storage. How do I find and use my full storage on the Mac?

from great third party (OWC, etc.) Some also have 'thermal sensors' to
add, where a replacement SSD/HDD may not include one as OEM did.

That is a software marriage between a 3 TB hard drive and a 128 GB SSD.
Yes I have a 3TB fusion drive but can only see the 121 GB Flash Storage when I go on About this Mac
