Which IP address? The one assigned by your cellular network for internet access? This can change at any time, and it is pretty much pointless trying to find it because it could change before you have even closed the screen to view it.
Or the IP address assigned to your iPhone by your WiFi router? Settings > WiFi then tap the (i) button next to the currently active WiFi connectoid.
Or the IP address which is generated by the private WiFi Hotspot feature for other devices to have access? This is difficult to find, the easy way is to have a device connect to the hotspot and then check its network settings. Look for Default Gateway.
