I put my phone on '' lost mode" and I don't know how I get email someday after that my password was changed and you put a recovery key. I was a vacation. since that apple doesn't explain me how that it is possible.

The thief had both your device and apparently also had your device passcode. If that happens, you can be permanently locked out, and the entire contents of the Apple ID compromised, when the thief enables a recovery key. Once that happens, and that usually happens quickly, then you are no longer the owner of the Apple ID.
You likely have no recourse. But, how did someone get into your account? They would need to know your passcode for the device and your Apple ID password; that's unlikely.
