Receiving an Apple Watch today for the purpose of fall detection. Is there HomeKit automations that can be triggered or maybe even a shortcut, to take actions so that emergency services wouldn’t have to break-in? Unlock the door, turn lights on etc… I’m hoping for the least required input, especially if I am incapacitated at the time of the fall.
Sorry, no, one cannot create automations (or shortcuts) based on fall detection. If you are conscious after a fall and are able to speak, you could ask Siri to control your smart devices using "Hey Siri."

Consider an emergency access key box, if local emergency services use such a system for access.
Your configured emergency contacts can also potentially assist with or provide access or access information, as they will be notified of an emergency.
