Accessibility features randomly turned on even after turning them off on my iPhone

I repeatedly turn off accessibility features and daily somehow they randomly get turned back on. Not all of them but enough to screw things up. I also have 4 or 5 touch, gestures that I am unable to turn off anywhere. I went to the Apple Store and was told just to reset defaults- I did that and then had to go through and remove all of the defaults! Please help.
