iPad Book's Two-Page Display Available Only to Twenty-Somethings

Why must I reduce my text size to a tiny amount to get two page display on my iPad? Clearly no-one over fifty was involved with this decision to change iPad Books. My twenty year old eyes would have no problem reading this; however, since I am approaching 70, not so much.

My point being that changing the text size appears to have no effect on things. That makes me wonder if something else is going on. Are you using Settings>Display & Brightness>Display Zoom>Larger Text? That can cause all sorts of weirdness with displays in certain apps. I tend to avoid it.
