Hello. I didn't find an answer when searching this Community. Compared to Kindle, in Books auto-bulleted and auto-numbered text is smaller, and in a different section of the book, italicized titles are larger within surrounding body text. Is there anything I can do to keep this from happening in Books?

As for what you might do in the composing process, you may have more luck in the an Indesign forum or a Kindle forum.
To let Apple know about the disparity you see between the two apps, you can use
(but they are likely only interested in problems you might see in the Books app, not anything related to Amazon's app).
Both. . . . I used Adobe's InDesign to export to EPUB on a Mac Mini. It opens in Sigil for some tweaks, then I review it different ways—through Books on my Mac desktop and/or iPad and Amazon's Kindle Previewer desktop app and online Previewer or Kindle device (I can choose views Tablet, Phone, Kindle e-reader).
