Is it sufficient to prevent an upgrade that is already downloaded but not installed by turning off "Install macOS updates? Some of my 3rd party software is not yet compatible and I need to wait for the vendor's updates. I am running Sonoma 14.6.1 and need to wait before installing OS 15

Yes ... but it is not foolproof and lately some folks obviously had their Macs upgraded without intention which is weird. So make good backups, just in case. Carbon Copy Cloner can make a bootable clone to an external disk so it is easy to downgrade, if an accidental upgrade happens (Silicon Macs might be picky with cloning, though).
Thank you for quick response! If i need the backup, my Time Machine should work - I hope. Will look into Carbon Copy Cloner as well.
Time Machine works also but then you'd have to install old macOS (takes 30-60 min), and then use the Migration Assistant to restore user data. With Carbon Copy Cloner you could clone that old bootable macOS back to the internal disk quite fast. Or instantly boot to the clone having the old macOS and continue working.
