Nope, there is no supported way to go back to iOS 17. For specific changes for such things as Control Center, it is now completely customizable, If you have not used any of the new features to customize the look, you should start here:

Use and customize Control Center on iPhone - Apple Support

Photos app is also now completely customizable. In addition to changing the size of the thumbnails on your screen, you can also review the steps here to customize it along with additional information on viewing your photos. If you do not like the Photos app, there are many other options available in the App Store, so the choice is yours there which one would meet your needs.

You now see bigger emojis because users had previously complained they were too small and send feedback to Apple. You can do the same and maybe they can make the size adjustable. In any case, Apple won't see your post here, so the place to do that is with this link:

Product Feedback - Apple

You can expect a change in iOS every year as that has been the standard upgrade schedule. If Apple never made changes that added new features to iOS, users would complain that Apple is not being innovative, and when changes are made, then users complain they didn't want any changes. We saw the same complaints when for years there were no changes to the Calculator app as users demanded more features. It really is a no win in either case, and would recommend that if you don't want to see any changes, then make sure to not update when you see the new version available.

This "update" 18.3.1 is a definite downgrade. Have a job site cellular wifi camera set up 6 months ago with Verizon and it was working like a charm with my iPhone 12 Pro and iPad 12.9 Pro 5th Gen. The phone updated 2 nights ago and I cannot logon to the job site with the iPhone unless I power off, wait a minute and then restart and even then it takes 2-3 times doing this before it logs on. The iPad Pro hasn't updated yet and it logs on almost instantly with 18.1.1 IOS. I also hate the new photos App interface. Its very confusing to use.

Alex ~ Your iPhone XS Max could be 6½ years old and the long process of applying an iOS update to an iPhone with a weak, aging battery can be the proverbial "straw that broke the camel's back." So...

Does your iPhone XS Max still have its original battery?

And what's the Maximum Capacity % here?...

few ppl told me here its probably that i changed battery ,capacity of IPhone, and older model but again its been working normally till i install latest version then everything messed up in it..

Changing the battery is not a problem, but having it done by a provider that is not listed as an Authorized Service Provider would be the problem if that was the case. Those may work normally until any demand is put on it, such as the flashlight or even the increased energy needed for the indexing on your files after an update. You cannot blame the update on a problem with a non-genuine battery if that is the cause.

The only thing that Apple could possibly recommend at that point is a Factory Reset or get another phone and do not make that mistake again.

So... Was the battery replaced at an Apple Store or by other qualified technician using a genuine iPhone battery?...

Yep, that is a problem. Update or not, your battery was going to give you problems. That is a constant issue seen here all the time with a non-genuine battery. The update may have increased battery demand while downloading and indexing the files after the update where you are now seeing the results, but that is like putting diesel fuel in your car and blaming it for not working correctly.

You should prepare yourself for phone shutdowns, increased loss of performance, and charging issues, all of which have been reported due to that battery install. Apple is not likely to provide any service to the phone now, which is why you were told to purchase a new one.
