I never use Apple Music but starts up automatically when I turn on bluetooth headphones. That's bad enough, but it keeps coming up even after being closed, over and over again. I cannot understand why I can't just delete an application that I never use, don't want, and behaves in such an annoying way.

I don't know why Apple have deemed it thus, but there are workarounds. The simplest is probably this tool: https://github.com/tombonez/noTunes.
