Why can't I control volume on Apple Watch 7 easily?

Apple Watch 7 recently updated to 11.0.1 and I noticed that when playing music, podcasts, or YouTube- when raising to wake the display not shows tabs that start with the calendar and clock with the music etc app below and available as an option to scroll to. the problem with this is now you actually have to interact with the screen to open the app and then you can control, say, the volume. Before, you could adjust the volume with the crown while playing something without having to open the app. I often use YouTube as a sleep aid and have my buds in. Very annoying to have to now open my eyes, open the app, the use the crown.

so, after googling , I discover that what im talking about is called "now playing". How to I get the raise to wake to return to now playing only. as opposed to being a background tile and the clock/calendar being the active tile?

ok, still learning here. I hadn't been familiar with the phrase "smart stacks". this is what ive been describing and YouTube showed me how to disable it and now on raise to wake, the now playing is displayed and I can control volume again. thanks to all that responsed! couldn't have done it without you hehehe!!!
