Listening to Apple Music and all I get is the instrumentals with no singing - well, I believe that the singing is in the background but extremely faint - like non-existent

I believe you might have turned on the karaoke mode. You can turn this off by tapping the mic button on the lyrics screen. You can read more about this on Apple introduces Apple Music Sing - Apple.
