My 4K Apple TV box does not show 4K HDR as a format option anymore. It has worked well for a couple of years but the best format I can now get is 1080p SDR. I also do not have the option to check my HDMI connection as I did before.

To what model TV is it connected? It is supposed to hide incompatible settings. If it has been switched around between various TVs, then it may have settings that reflect a formerly connected TV.
Is there any equipment in between the Apple TV box and the TV (e.g. receiver, soundbar, HDMI splitter, HDMI switch, HDMI Audio Extractor, adapter)? Could that be lowering what is supported?

if it was me then I would try to use another HDMI cable
and or maybe test the appletv box with another tv to rule out the box or the tv being the culprit
