I'm about to upgrade to a new phone, and was told to sync my phone with my iCloud. After doing that, all my documents on my iMac are missing - the entire folder is empty! How do I recover these documents?

You could restore them from your Time Machine backup. Or try Apple's suggestions to recover your files in Recover deleted files on iCloud.com - Apple Support
I tried both of those already. Time machine doesn't take me back far enough, even though it was only a few days ago. There is nothing in the "Recently Deleted" folder on iCloud.com.
