As a family, we have 5 Macs running on iCloud, which Syncs everything across all 5.
As Senior of my family (66) there are various document and files I wish to have private to my Mac, which I don't really want my Kids or Grand Kids having access too or showing up at Unie.

Each user should be syncing their own Apple ID. One cannot access other user’s files unless shared explicitly. You can also not sync said documents in iCloud.
