Apple Music does not sync music. The Apple Music app on Mac and on Windows just plays music.
If you are referring to the Apple Music subscription service, it can sync music if you turn on iCloud Music on a computer and iOS devices, but syncs it content from a base computer to iCloud which is then made available to others devices. It will not remove anything from iOS devices though.
You should however if the iPhone is the only place the music is on, extract it, and back it up. You will need a 3rd party app for this.

Just to add a little to the comments above when you have the new Music app on a Mac instead of iTunes, syncing is managed in Finder. It will happily wipe out the media content on the device if you give it an chance and the content isn't already in your library. Please reclaim your media before you experiment with Finder.

Is this Downloaded Home Music?:
If it is downloaded, then it is locally-stored. So, if you remove the download, then it would stay in Apple Music.
