Apple ID email suddenly reverted

About a year or two ago I had changed the email associated with my apple ID. I never had any issues with updating apps until about a week ago where my email reverted solely for updating apps that I had updated countless times before. I have tried to change the email back manually but have had to go through what seems like a four step verification system, where it asks for my phone number, my email, a verification code, and it is even asking me to confirm my credit card payment information, but does not allow me to use the scroll wheel for the expiration date of the card. For some strange reason, everytime I have tried this over the last couple of days it has glitched out at that very point, the month and the year scroll wheels are inaccessible and I can see a very faint outline of the "continue" prompt in the background. The only solution that I have found for this issue is simply deleting and redownloading the apps, but I am trying very hard to avoid this because there are about 30 something applications that have this issue and most of them have inner app downloads and or log in info that i would rather not have to reload (i.e. spotify, banking, gmail, etc.) If anyone could help me out, it would be extremely appreciated. I'm sorry for the longwinded nature of this, but I am quite frustrated and desperate.

I have never in 20 years of helping on this support site ever heard of an Apple ID automatically reverting. I don't know ho I could make it do that even if I tried. So my interpretation of this is that it didn't automatically revert but something is making you think it did.

If when you updated an email address used for your Apple ID you actually created a new account instead of actually modifying the address on an old one then yes, the apps will want to be updated under the old account. You will have to delete them and download them under the new account. Your alternative is to go back to using the old account, changing the address as it should have been done. It will be tricky using the new address though since you are currently using it for the new account. It can be done but has to be done carefully. I don't post about that unless you need it.
