Trying to backup an apple watch before getting a new one

So i just ordered a new apple watch and just recently had gotten a new phone. my older phone wasn’t backed up properly and it never backed up anything with my apple watch. so im just trying to figure out:

1. how can i unpair and pair my phone up again with my watch? it doesn’t even show up on the app and if i do that will all my information stay on my apple watch?
2. is there anyway i can just back up my old apple watch and just transfer it over to my new apple watch?
3. i also have an ipad and a mac book, is there anyway i could use those to help me with this process at all?

really any help would be awesome, i haven’t seen any coverage on my case particularly.
