Contacts from your Exchange - Birthdays are all one day later

This is so strange and had it for many years.

My contacts are on Microsoft 365 (formerly Exchange). In the contacts the birthdays are all correct.

In Contacts on my iPhone it's correct

In Contacts on my Macbook Pro - the birthdays are all one day later and obviously shows up in the calendar like this

How do I correct please as it's really annoying!
