How can I remove 'Pages and Numbers filename' from my Files app?
Why have 'pages and numbers' been added to my file names and how can I get rid of them?

Those are the file extensions for Pages & Numbers. See if "Show all filenames extensions" is check in Finder > Settings… > Advanced. Uncheck it if it is.

When the Finder's Settings > Advanced > Show all filename extensions is unchecked, Pages and Numbers will still generate filenames with their extensions when saving or exporting document content. That is the way they (and many non-Apple) applications are written to work on macOS.
On macOS, filenames with extensions are how the operating system automatically determines what application will open those documents when double-clicking them in the Finder.

You are not alone 👍
The same behaviours and same steps were performed for files synced to iCloud
Numbers files were showing the .numbers extension, Pages with the pages extension, Keynote, QuickTime Player, TextEdit files all with appended extensions
Using a M3 MBA, M2 Mac Mini and M3 Mac Mini all with Sequoia 15.4
Each was updated on the day Off Release of 15.4, Mar 31, 2025
Theses behaviours only started after the installation of 15.4 and not before

Today, April 7 and as I write this reply
Just checked again and the file extensions have since disappeared ( not showing )
You may give this some time to work itself out.
Maybe a couple of days to a week
It should not be that way but patience is a virtue
Much older versions of Pages offered a checkbox on the Save and Export panels that allowed a user to show or hide the file extension. Apple eventually got away from that approach to where they are today by revealing the extension. One can still hide or show file extensions via the Finder Get Info panel though I don't perform or recommend it.
Apple's macOS is neither Windows nor Linux-based and as a UNIX operating system, filenames with extensions are important.

Well I'll be a monkey's uncle. 🤔
Thank you. Unfortunately the Finder filenames extensions was unchecked so the problem must be somewhere else! tried checking and unchecking but this did not work!
I understand what you are saying but it is only a few of the file names which show the extension. why not all of them?
You'll have to ask VikingOSX about that, since I've never created Pages or Numbers files.
Now I understand the situation - thank you!
An encouraging response - thank you!
