Every time I try to make a new VPN config, it simply fails, my existing configurations are still working, but if I delete one, I can't add it anymore ...
Any idea what could I do to fix this ?

Contact the network administrator at the location you are trying to connect to. So if it is your workplace and you are trying to create a VPN secure point-to-point tunnel to the workplace network, contact your workplace IT Admin.
macOS just does not allows me to when I try to make any VPN connection ...
