within the watch settings on iphone i am missing the action button settings. where can i find those or fix this issue. The action button settings are not visible within the watch app on my iPhone. How do I get it to appear?

The watch is an ultra 1st generation but I notice in the watch app is shows the old Series 7 watch. I unpaired and then paired the watch and still get the same result. Why does it not recognize the new watch?

The backup of your watch is part of the iPhone backup. So you still have the old backup if you set it up as a new device, in case this does not work.
Yes, section 4 in this article about setting up an Apple Watch mentions this step in case you have more than one watch paired. And, setting up as a new device will make sure, that the backup data from the older model does not cause any issues.

No I can only see the Series 7 watch and not the ultra watch. I unpaired the watch and repaired it and the same old watch appears in the watch list. I would hate to delete all my data by not using the backup data. Do you think that is the only option?
See below. Activity is missing from the watch. Likely because the previous watch was not properly unpaired
So you are saying that I should unpair. Then when I add a watch add as a new watch and do not select a previous backup. Is that correct?
