How do I opt out of Apple Watch data sharing with NIH?

The NIH has announced a plan to access, among other information, smart watch data for, presumably, health studies. If I do not want Apple to share my info with the NIH, can I opt out somehow?

Only if required by law, in which case there would likely be no opt out. As of now, no such law exists. Your data is encrypted so it’s unlikely to be useful anyway.
