Insufficient funds on Apple Gift Card purchased at 7-Eleven
The card was purchased at 7 Eleven for $120 when I t was first used it had only $25 on it. the receipt was for $120

From what I understand that is not possible. There is no partial redeeming of a gift card. When you redeem it the entire amount is transferred to the Apple Account balance and nothing is left on the card.
Perhaps you or the assistant mis-read the value on the card and charged you the wrong amount? If that is the case then good luck trying to get them to rectify the situation.
