You can create keyboard shortcuts for menu items:

The menu item in this instance would be Edit>Transformations>Capitalize.

Install the free WordService by Devon Technologies, available in the Mac App Store. After installing, go to System Preferences > Keyboard > Shortcuts > Services & then enable the "WordService: Sort Lines…" options under text (you'll have to scroll down).
Capitalize is such a generic description. The following apply in Pages v14.4 on Sequoia v15.6.1, or where mentioned, the free WordService Services suite:
In System Settings > Keyboard > Keyboard Shortcuts, select App Shortcuts in the sidebar, click the "+" icon and use those settings (I used control + option + C as the keyboard shortcut, as an example):
This works. Thank you. I did find the "Initial Caps Of Words" function, however I did not see "Title Case: Capitalize every major word and omit conjunctions" as you have written above That would be even better. Where did you find it?

Format menu > Font > Capitalization > Title Case. I was adding result descriptions, and only that which precedes the colon is a menu item, with the exception of WordService. I could have been more clear.
