Using latest Macbook Pro and MAC OS. In older you had a switch to turn off time machine backups temporarily. You can then just turn it back on when you were done with maintenance, etc. That switch no longer exists. How can I NOW stop time machine backup temporarily and then turn it back on?

Set it to backup manually in the Options.
What “maintenance” are you doing on your Mac? I have never needed to conduct any “maintenance” on a Mac.

No need to stop TM as it works in the background and will stop and restart as required to complete any backups.
