You are seeing historical data by apps no longer on your phone. The lapse of time will "fix" it.
At some time during the last ten days, you had one or more apps installed on your phone that used a lot of CPU until you deleted them ("Recently Deleted Apps"). Any usage from those apps on last Tuesday will "age out" of the sum by tomorrow, then usage from last Wednesday, et cetera. Within ten days, all the usage from those apps in those days will be gone from the summary. Of course, if you delete more apps, their usage will be added to Recently Deleted Apps.
