AirPrint epson Problem printing in Black and white

Hi I have a bizarre problem when I use AirPrint true MacBook Air 2020 (M1 series) 13 inch , when I open word file or pdf and click print with the default settings for printing and chose black and white option , I get some colours mix with my black and white , like greyish style of print , I put a empty cartridges in my printer and I leave only black inside full up and I got nothing print , when I put the new cartridges and again try to print black and white and lift the hinge(of the printer ) I see that the first colour is red ?? I decide to experiment with the software and I conclude that the problem is in the Paper option's set up -when its on AUTO-i get colours on Black and White , when I set the Paper to "PLAIN PAPER" everything work correctly-and Black and White is represented like is should , the problem persist on iPhone 15 , 16 pro (iOS 17-true-18) , is there a way to set paper to constant position
