I would give anything the go back in time two weeks and not install that OS. Nothing but trouble, and be aware that you can no longer back install to past OS. Particular problems with Adobe, especially Photoshop. Apple keeps pulling my warnings about this without explanation. My Apple Care is current, and I need this solved.

Original Title: Warning about Tahoe
From your Etrecheck report:
disk3s5 - Data [APFS Virtual drive]
Filesystem: APFS
Mount point: /System/Volumes/Data
Encrypted
Used: 953.08 GB
Shared values
Size: 994.66 GB
Free: 19.86 GB
You have only 20 GB free out of 1000 GB, which is 2% free, there should be at least 15% free space, this is especially important for Adobe apps like Photoshop, Lightroom, as not only do they generate a lot of disk space usage for scratch space, they also require lots of space for virtual paging to disk.
Also this
disk5 - Drobo 5D - TB 17.59 TB
External SCSI
disk5s1 - EFI (MS-DOS FAT32) [EFI] 210 MB
disk5s2 - B***********e (Mac OS Extended) 17.59 TB (17.22 TB used)
Not sure what this is being used for but it is also 98% full, likely to cause slowing and thrashing about.
The performance numbers for your drive are also concerning:
Performance:
System Load: 10.74 (1 min ago) 5.60 (5 min ago) 4.71 (15 min ago)
Nominal I/O usage: 0.42 MB/s
File system: 9.60 seconds
Write speed: 1712 MB/s
Read speed: 4265 MB/s
The write speed is much slower than read speed, this should not be so different. On my 2019 MacBook Pro, which I would expect to be much slower than your Mac Pro, I get 3000 MB/s for both read and write. Usually those numbers are very similar. Yours might be lower because of a hardware issue or maybe because of the low disk space.
