Is anyone else having problems with Maps? Despite going into settings and setting 'Driving' as the default, every time I plan a route it defaults & moves to 'Walking'. Not a HUGE problem but mildly annoying.

if there is a bug there in the macOS baked in Maps.app
to be proactive you can file a bug report / submit your Apple Feedback here: Product Feedback - Apple

Otherwise your options would be to wait as suggested above by dialabrain or
use a different maps application...

I would wait to see what comes with the 26.1 release. There are small bugs with any new version.
Mine defaults to driving.
Just checked mine and it also defaults to "drive." The is a Maps setting option:
How is your set?
Mine is set to Driving but whenever I hit 'return' for a route, it moves to walking.
