Change font to single size/style for entire spreadsheet in Numbers

I am trying to select all the cells of a spreadsheet to change all the text to a single, uniform font and size. It is a little distracting that entries copied and pasted from other apps (notes taken by me at different places and times) look a little different in the table.

I seem to be able to change it in selected cells, or as a new 'default' text for the spreadsheet, but even if I click that upper left circle symbol to select everything, changes to text via the format sidebar or selecting the 'text' menu do nothing.

No idea here, either. It should have just worked.

In the future you might try Paste and Match Style instead of the normal Paste. Then you won't have to go back and change the text size of pasted in stuff. It is in the Edit menu or use the keyboard shortcut for it. I changed the shortcut to Shift Command V to make it easier (was Option Shift Command V). You can do that in System Settings->Keyboard->Keyboard Shortcuts->App Shortcuts. I did it for "all applications" because other apps have the same operation and shortcut combination. There was probably something else that had Shift Command V, but, whatever it was, I don't recall ever using it.
