Failing to change backup location for itunes using mklink /J due to only having exFAT external drives

All of the tutorials or videos I have found on how to change the default location of my itunes backup on a Windows 10 PC have involved using mklink.

mklink ONLY WORKS ON NTFS file systems.

Does anyone have a method to set it to an exFAT drive? I have a 2Tb and a 4Tb, both formatted using exFAT (factory set)

My phone is 256Gb and my PC is too. I only have 156Gb free, so the initial failed after running for 6 hours..
