I just opened the Music app for the first time on Tahoe and the color is obnoxious. I have a 5K monitor and the red/fuchsia/barf pink color is ridiculous. Is there any way to tone that stuff down? I don't know what Apple was thinking, but it is WAY too harsh on the eyes.
Also, the mini player at the bottom is annoying, too. I don't see any way to turn it off (I don't need it).

If you aren't married to LiquidGlass — and it certainly sounds like it! — you can get rid of the worst of it under System Settings > Accessibility > Display > Reduce Transparency. That's system-wide, not just Music, but Reduce Transparency does far more to tone down the new look than System Settings > Appearance > Liquid Glass > Tinted does.
As of Tahoe 26.1, there's no longer a fix for the controls at the bottom of the Music app. Sorry!

I've already done that (but some things are still annoying). As for the music app controls, whoever thought it was a good idea to put them at the bottom needs to be reassigned to mopping floors. Apple just isn't listening to their users anymore (not that they really ever did). Change for the sake of change is never a good thing. They need to be focused on making the OS faster, more stable, and more secure - period. All of the fluff is just dumb.
