I love the new features of iOS 27 but my battery life does not last long and the keyboard does not work properly. I had none of these issues with iOS 18, thus I would like to change the software on my iPhone 15 back to iOS 18. Please may you advise how I go about doing this.

Exactly what is not working right for you? If you provide specifics, someone might be able to help. Going back to 18 is not possible.
Battery life and keyboard action is no different on 26. I would try to find out why your settings or apps are causing this.
If ir were me I would ensure that all my data was sync'd to icloud or similar cloud and reset to factory (erase all data and settings) and start again with out any security apps and with only the apps you use daily.
